In order to keep myself accountable for actually planning our weekly dinners, I decided to nickname Monday's here at the blog - Meal Planning Monday - and post a picture of our menu board for the week.
So, without further adieu, here is our board this week:
Tonight we are having whole grain thin spaghetti with a roasted garlic and herb red sauce (already in the crock pot)
Tuesday, we are having tacos - my kids favorite meal
Wednesday, we will be eating apple/sage pork chops
Thursday, we are having asian grilled salmon
Friday, I wrote down that we are having chicken but I may change that to venison. I'm doing it up in a szechuan stir-fry and last time I made it with the venison, it was to die for.
Saturday night, I'll be making homemade pizza and Sunday, I guess I am hoping to go out? Ha. Not sure about Sunday yet. Maybe some type of soup and sandwiches or salad.
This post is mostly for my own benefit but if it helps you decide what you'll be having for dinner this week as well, that's awesome.
I know that for me, when my meals are planned out in advance, my life flows a whole lot more smoothly in the evenings...
Now to write out my grocery list for the week. Of course, I'm sure I don't have ALL of the ingredients I need for these meals....
Such is life.

Kiss the Cook: Fresh Peach Cobbler
Peaches are my all-time favorite summer fruit and the little farm about a 1/2 mile from my parents house has got to have the best. When the peaches are ripe, they are the kind of food that when you take a bite, your eyes close involuntarily, you get a big smile and a little sigh escapes your mouth from sheer pleasure.
The smell...texture...flavor...ahhhhh...it's just out.of.this.world.
In a nutshell? Yum.

Now, I understand, some of you may not be "fruit people"...but guaranteed you've got to be "dessert people" so let me recommend this recipe for ya'll.
We all know that Paula Deen likes butter but while this does have a little butter in it, it's really all about the peaches.
And, Girls, t'is the season to rock the peaches...
Ingredients:
- 4 cups peeled sliced peaches
- 2 cups sugar, divided
- 1/2 cup water
- 8 tablespoons butter
- 1 1/2 cups self-rising flour
- 1 1/2 cups milk
- Preheat oven to 350 degrees
- Combine peaches, 1 cup of the sugar and water in a saucepan and mix well
- Bring to a boil, then reduce heat and simmer for 10 minutes
- Remove from the heat
- Place butter in a deep baking dish (9 x 13) and put in the oven to melt
- Mix remaining cup of sugar, flour and milk slowly to prevent clumping
- Pour mixture over melted butter
- DO NOT STIR!
- Spoon fruit over top, gently pouring in syrup
- Batter will rise to the top during baking
- Bake for 30-45 minutes (I baked mine closer to 45)
(It's also Daddy Approved and Kiddo Approved because it's so darn goooood.)
If you're wondering, I served mine up to my family nice and warm with a side of Turkey Hill Original Vanilla ice cream and a sprinkling of cinnamon on top.
